In 2012 we offer you the opportunity to participate in very special Italian cooking classes with leading chef Patrizia Simone.
Patrizia Simone is a well known award winning chef from the Italian family restaurant Simone’s, located in Bright. In 2009 Patrizia was honoured as a Legend of the Melbourne Food and Wine Festival in recognition of her chef skills and passionate promotion of seasonality and regionality through her work with local food and wine producers.
Simone’s, a one hatted restaurant in the Age Good Food Guide, has been run by George and Patrizia Simone for the past 22 years.
Bright and the northeast recalls Patrizia’s native town Perugia in Umbria.

Bring your friends, work colleagues, and family to share a day of laughter, surprise and beautiful food as you discover the secrets of Italian cooking.
Hands on pasta – make traditional hand-made strand pasta enhanced with vibrant, flavoursome sauces and filled pastas such as ravioli, tortellini and agnolotti.
Antipasti – small dishes such as octopus salad, smoking fresh river fish, curing and pickling your own vegetables, bagno calda (fresh greens and dipping sauce), bruschetta.
Game – game is not just for restaurants, here Patrizia will share secrets that will give you confidence to tackle delicious game meats for delicious home meals.
Orto e piatto (from the garden to the plate) – seasonal local produce picked and cooked. The season dishes in this menu will enable you to discover the beautiful region we live in with all year round produce like cheeses, olive oil, nuts and wine.
Pranzo della Domenica (lazy Sunday lunch) – menus from the traditional Italian family lunches like Nonna use to make, and featuring dishes like home made gnocchi with meat ragu, Italian-style rostbif, traditional bruschetta, zuppa inglese.
Classes begin at 10.30 for 11 am with a good coffee and snack before we sit down informally to discuss the day s cooking. Whichever class you undertake, the format will be to prepare a seasonal lunch utilising the freshest and most interesting ingredients we can source locally.
The maximum class size is eight, which allows time to cover any specific questions or techniques that each participant may wish to explore.
All classes are hands on, and Patrizia demonstrates all techniques as required.
You can also request certain techniques or use of ingredients with which you may not have much confidence or things that you may enjoy, but do not often get the chance to cook.
We sit down to lunch around 1.30pm.
Bring a good sense of humour and adventure. Take home some great tips, culinary trivia and special techniques, as well a folder of the day’s recipes.
Class prices are $150 per person on weekends and $120 midweek. Cost includes wines to match the delicious lunch.

The full amount is payable following confirmation of your booking.
If cancellation occurs less than 14 days prior to the arrival date we
will endeavor to rebook the accommodation. If successful, full payment/deposit
will be refunded less $50.00 administration levy.
If rebooking is unsuccessful The Kiln house will retain 25% of the
accommodation fee. For cancellations more than 14 days prior to the arrival
date, a full refund will be paid.
